In March 2027, we will open Restaurant Hi – a newly built pavilion at Hotel Hesselet. Here, we invite guests into an exclusive dining universe with an open kitchen, intimate settings and a strong focus on hospitality, storytelling and top-class gastronomy. Under the leadership of Jeppe and in close collaboration with the sous chef, the kitchen team will be responsible for delivering a seamless experience where taste, aesthetics and presence go hand in hand.



Restaurant Hi will be a gastronomic lighthouse, where the guests' journey begins even before arrival, continues through an evening full of taste, tranquility and storytelling – and only ends when they say goodbye the next day. Here, everything must work together: the location by the Great Belt, the universe of the kitchen, the intimate atmosphere and a service team that not only serves, but guides, communicates and creates memorable moments.



Your role as a chef

As a chef at Restaurant Hi, you will be part of a permanent team of three chefs who, together with the sous chef, are responsible for the daily work in the kitchen. You will help prepare, present and serve the menus in the open kitchen, where you are close to the guests and actively involved in the story of the ingredients and dishes. Here, you will not only be responsible for classic kitchen tasks, but also have the opportunity to develop professionally, contribute ideas and help shape a restaurant from the very beginning. You will be an important part of a small team where collaboration, precision and passion are at the center - and where your efforts are visible to both colleagues and guests



Who are you?

We imagine that you are a professionally skilled and committed chef who loves working with seasonal ingredients and takes pride in delivering high quality. You are structured, but at the same time curious and open to new ideas, and you thrive in an environment where people work closely together and help each other. You may have experience from high-level restaurants, but most importantly, your passion for food, your commitment to the craft and the desire to help create something new. You are comfortable standing in an open kitchen, where you not only cook food, but are also part of the experience for the guests.



Working hours and framework

The kitchen team follows the same rhythm as the rest of the pavilion in a fixed 2-week cycle:

Week 1: Preparation Wednesday – open Thursday, Friday and Saturday.

Week 2: Preparation Tuesday – open Wednesday, Thursday and Friday.


The first year the restaurant will be open three days a week, which provides both a focus on quality and a balance between work and leisure. In addition, we will be closed for the holidays in week 7, the first two weeks of July, week 42, as well as Christmas and New Year. For the New Year's stay on 30/12–1/1, the pavilion's employees will be part of the rest of the hotel team.

This spring we will open our new terrace and Japanese-inspired garden - and in this regard we are looking for an outgoing, smiling and service-minded employee who wants to be our visible host in the garden and on the terrace.


The position is perfect for someone who may have a gap year, loves being among people and is motivated by giving guests a personal and present experience.

Meetings and conferences

About the position

As a terrace waiter, you will be our face in the garden and on the terrace. Your most important task is to ensure that guests feel seen, welcome and well-behaved.

Your tasks will include:


  • Preparation and operation of our sales cart with champagne, wine and snacks
  • Outgoing and personal service to guests in the Japanese garden and the garden facing the water
  • Focus on visibility, atmosphere and additional sales in outdoor areas
  • Ensure that guests lack nothing while enjoying the surroundings
  • Experience is not a prerequisite – we provide thorough training so you feel comfortable in the role.

Working hours and period

Working hours: approx. 2:00 PM – 8:00 PM

Working days: Thursday, Friday and Saturday

Period: April 1 – September 30


There will be the possibility of supplementing hours in the restaurant as well.

Hotel Hesselet – a place with soul

Hotel Hesselet is located in one of the most beautiful places on Funen. Right where the forest meets the sea, and where you can see the bridge that connects Zealand with Funen. Hesselet is located in Nyborg, which back in the Middle Ages was the place where the king met with the most important people in the kingdom.

The hotel is named after the forest it is located in, and Hesselet means where the small hazel trees grow. Hotel Hesselet is changing – and in good hands

In 2024, Hotel Hesselet was taken over by Carama Family Office, which has a clear vision: to preserve the soul of Hesselet while developing the hotel for future guest experiences - without compromising the place's history and warmth.


The new owners have begun a gentle renovation of the hotel's facilities, restaurant and outdoor areas. Investment is being made in both the setting and the people behind it - with a strong focus on professional pride, well-being and first-class service.


The goal is ambitious, but clear: Hotel Hesselet must be among Denmark's most attractive hotels – both for guests and employees. Here, one must be able to feel the special calm, quality and presence that Hesselet has been known for since 1967 – in an updated and contemporary version.
