Jeppe Foldager becomes the new gastronomic manager at Hesselet in Nyborg, and his goal is simple: a restaurant full of happy guests.
Soon there will be another reason to visit Nyborg. Award-winning chef Jeppe Foldager is moving into the kitchen at Hotel Hesselet, which was purchased by Carama Family Office last year. The hotel is already undergoing a gentle renovation and upgrade, and now the restaurant is following suit.
Although Jeppe Foldager is only 39 years old, he has already been at the helm of several of Denmark's best restaurants. In 2013, he was named the world's second best chef when he won silver at the Bocuse d'Or - the unofficial world championship for chefs.
"Here in Denmark, it's not always that easy to get people to visit a hotel for its cuisine, and that's a shame, because many hotel restaurants are at a very high level. The restaurant at Hotel Hesselet does the same, and that's why it has been appreciated by guests and recognized by reviewers for many years. Now we're going up a level," says Foldager, who already has experience with hotel restaurants from his time as head chef at Alberto K, which was at the top of the SAS Royal Hotel.
He has previously been sous chef at Søllerød Kro and head chef at Restaurant Kanalen and was most recently head chef at Dragsholm Slot, which received one of the prestigious Michelin stars in 2017. "I have had some good years at Dragsholm and am leaving behind a kitchen that will be able to reach two Michelin stars. At Hesselet I will follow my own heart, and the goal is to fill the restaurant with enthusiastic guests."
Foldager wants to turn up the green and let it reflect the fact that the hotel is located between the sea and the forest. Funen offers a large pantry, which will be integrated more into the kitchen at Hotel Hesselet.
"But I also want to be at the forefront of a healthy work culture. It's a myth that you have to work 80 hours a week and never see your family to reach the top gastronomic level. My goal is to create a workplace where there is room for whole people," he says.
Carama Family Office purchased Restaurant Lieffroy, located near Hotel Hesselet, in January. Together with Lieffroy's host couple, Helle and Patrick Lieffroy, Jeppe Foldager wants to turn the coastline in Nyborg into a "gastro coast" and a destination for local, national and international guests.
Jeppe Foldager will take office on May 1, 2025.
